This is an unusual post for me considering I generally post about style, but I've had quite a few people ask me about these Chocolate Covered Raspberries I posted on Instagram, and it's been such a busy week at my new job that I don't have any new outfit pictures to blog about :).
Anyhow I first discovered these delicious treats on a raspberry farm while driving through Tasmania years ago. My mom and I both made it a mission to replicate these bite size morsels and have made them often over the years! The trick to getting the right amount of raspberry burst is to use frozen raspberries; if you're going to use fresh, then freeze them beforehand.
Without further ado, here you go!
1 cup Frozen Raspberries
200g chocolate (I find a mix of dark and milk yields the best flavour)
Cover a plate or baking tray with baking paper. Melt the chocolate, either in a saucepan or microwave, and then dip the raspberries into the chocolate. Once covered in chocolate, place on the baking tray. I find a fork works pretty well for the dip and twirl. Place the raspberries in the fridge for at least 20 mins, and then devour!
